Can I run nLite again to remove even more things without starting over?

For the most part the answer is yes. If you choose the unattended, it will replace the old WINNT.SIF file so if you choose that option, you will have to redo the entire WINNT.SIF file. Some settings that can be entered in WINNT.SIF file is not set by nLite. You have to do it manually so if you have settings on the WINNT.SIF file that nLite doesn't change, you will have to copy those settings over to the new file.
